Vegan Banana Bread
This vegan banana bread is incredibly moist and flavorful, thanks to very ripe bananas and a touch of coconut oil. No one will guess it is made without eggs or butter.
Ingredients
- 3 very ripe bananas, mashed
- 80ml coconut oil, melted
- 150g sugar
- 1 teaspoon vanilla extract
- 260g all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 60ml plant milk (oat or almond)
- 100g walnuts, chopped (optional)
- 50g dark chocolate chips (optional)

Preheat oven to 175°C (350°F). Grease and line a 9x5 inch loaf pan.

Mash bananas in a large bowl until mostly smooth with a few small chunks remaining.

Mix in melted coconut oil, sugar, vanilla, and plant milk.

In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.

Fold dry ingredients into the banana mixture until just combined. Do not overmix.

Fold in walnuts and chocolate chips if using.

Pour into prepared loaf pan and smooth the top. Optionally, slice a banana lengthwise and place on top for decoration.

Bake for 50-55 minutes until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack.
