Mango Lassi Smoothie

This plant-based version of the beloved Indian mango lassi is just as creamy and refreshing as the original. Coconut yogurt provides the rich, tangy base while frozen mango creates that thick, luscious texture.

Ingredients

  • 300g frozen mango chunks
  • 200ml coconut yogurt
  • 150ml oat milk
  • 2 tablespoons maple syrup or agave
  • 1/4 teaspoon ground cardamom
  • Pinch of saffron strands (optional)
  • Fresh mint for garnish
  • Crushed pistachios for garnish

Instructions

    Add frozen mango, coconut yogurt, oat milk, maple syrup, and cardamom to a blender.

    If using saffron, soak strands in 1 tablespoon of warm water for 5 minutes and add to the blender.
